With the warm summer we had last year I had high expectations that this year would be a repeat, but my hopes are being washed away with all the rain we have had. I know that the summer is not over yet and a good dose of sunshine is still a possibility - this weekend gone was a good start! But on the days the sun is not shining I still want to feel summery and I do this by eating all the foods that are in season now and that I associate with summer.
My favourite summer fruit is strawberries; I know you can now get them all year round but there is nothing better when British strawberries come into season. I do love strawberries just on their own but I also love to try new recipes and I thought I would share an alternative salad with them in.
Strawberry & Nectarine Salad
Serves 4
- 50 grams Rocket
- 2-3 Nectarines
- 200 grams Strawberries
- 2 tbsp Balsamic Vinegar
- 1 tsp Runny Honey
- Salt & Pepper
- 75 grams Goats Cheese or Feta Cheese
- 30 grams Pine Nuts
Firstly rinse the rocket salad and place it on a dish.
Wash the strawberries and nectarines. Cut the nectarines into wedges and take the tops of the strawberries and cut them into halves. Place the fruits evenly over the rocket.
Mix the balsamic vinegar and honey together and add seasoning to taste. Drizzle over the salad.
Toast the pine nuts on a dry frying pan. Crumble the cheese over the salad and sprinkle the nuts.
